Ingredients:

· 1 cup all purpose flour (plain flour, maida)

· 1 cupgramflour (besan)

· 2 tablespoons fine semolina flour (fine sooji)

· 4 tablespoonoil

· 1 1/4 spoonsalt, adjusttotaste

· 1 teaspoonredchiliflakes

· 1/4 teaspooncaromseeds (ajwain)

· Pinchofasafetida (hing)

· 1/2 cup water or add as needed

· Oiltofry

Method of cooking:

1. Mix flour, semolina (sooji), gram flour (besan), salt, carom seeds, asafetida, chili flakes, and oil, together.

2. Add water as needed to make firm but smooth dough. Cover with damp cloth and set aside at least for ten minutes.

3. Knead the dough for another minute and divide into four equal parts.

4. Take each part of the dough and make a flat ball shape.

5. Roll them thin into about 9-inch circles. Prick them with a fork all over the rolled dough, the Paree do not puff when frying.

6. Cut each of the rolled dough into about half inch wide and 3 inch long pieces. Note: youcancuttheminyourdesireshape.

7. Heat the oil in a frying pan on medium heat.

8. The frying pan should have at least 1 inch of oil. To check if the oil is ready, put a small piece of dough in the oil. The dough should make the oil sizzle and come up slowly.

9. Make sure to place just enough Paare so you can turn them over easily when frying. Fry the Paare until both sides are light golden-brown.

10. After Besan Paare come to room temperature they should become crisp.

 

AsparagusWithGinger

Ingredients:

· 1 bunch of asparagus, approx. 1 pound

· 2 tablespoonoliveoil

· 1 teaspooncuminseed (jeera)

· 1 tablespoonmincedginger

· 2 teaspoonlemonjuice

· 1/2 teaspoonsalt

· 1/2 teaspoonblackpepper

Method of cooking:

1. Holding the stalk at both ends, bend gently until it breaks on its own. Discard the hard portion of the stalk.

2. Cut the remaining asparagus spears diagonally into 2 inch pieces.

3. Bring oil to medium heat in a large frying pan that can hold all the asparagus.

4. Add cumin seeds and wait till they crack. Then add asparagus, ginger, lemon juice, salt and black pepper.

5. Stir-fry for about 4 to 5 minutes until asparagus are tender but still crunch.

6. Serve hot or at room temperature.

 

AlmondCashewBurfi

Ingredients:

 

· 1/2 cupalmonds

· 1/2 cupwalnuts

· 1/2 cupcashewnuts

· 1 1/4 cupsugar

· 1/2 cupwater

· 1/2 teaspooncardamon powder

· 1 tablespoon sliced almonds to garnish

Method of cooking:

1. Dry grind the walnuts, cashews and almonds in a food processor.

2. Dry roast the groundnuts in a frying pan on low medium heat.

3. Roast them just enough so that the nuts start to give off an aroma. It will take about 4 to 5 minutes. Remove from heat and set aside.

4. Put the sugar and water together in a saucepan on medium heat. Bring to a boil to make the 1 thread syrup or on the candy thermometer it should reach 230 degrees F.

5. Turn off the heat and stir in the cardamom powder.

6. Add the nuts to the syrup and mix, and then spread over a greased 8-inch plate. Note: don’t let the syrup cool off. It must be spread while still hot.

7. Wait a few minutes until burfi is set but still soft.

8. Then cut the burfi into any shape you like (such as square, diamond, triangle).

9. Garnish each piece of burfi with sliced almonds while the burfi is still soft.

10. Allow the burfi to cool for about an hour to dry and hold its shape. Nowyoucanremovetheburfifromtheplate.

11. Burfi can be stored for a month.

 

CucumberCooler

Ingredients:

· 1 cucumber peeled and cut in small cubes to make about 2 cups

· About 8 mintleaves

· 3 cupswater

· 1 tablespoon lime juice adjust to taste

· 3 tablespoonsugaradjusttotaste

· 1/4 teaspoon salt adjust to taste

· 1/4 teaspoon of black pepper adjust to taste

· Icecubestoserve

Method of cooking:

1. In a blender, puree the cucumber, mint, salt, pepper and sugar. Pour the puree through a fine mesh strainer into a bowl. Use the spoon to press the solids to take out all the juice. Therewillbeabout 1-1/4 cupsofcucumberjuice.

2. Add the lime juice and water mix it well.

3. Fill the glasses with ice cubes and pour the cucumber drink.

4. Cucumber cooler is ready to be served. Enjoy!
