Ingredients:

· 1/2 cup gluten free rolled oats

· 1/2 teaspoonbakingpowder

· 1 container (5.3 oz) siggi's blueberry or vanilla bean yogurt

· 1/2 mediumripebanana

· 1 egg

· 1/2 teaspoonvanilla

· 1/3 cup fresh or frozen blueberries, plus more for serving

 

Directions:

1. Place all ingredients except fresh blueberries into a blender; blend until smooth. You may need to add a teaspoon or two of almond milk. Set butter aside to thicken up for a few minutes.

2. Lightly coat a large nonstick skillet or griddle with butter or cooking spray and heat over medium low heat. Drop batter by 1/4 cup onto skillet. Add a few blueberries on top.

3. Cook until bubbles appear on top. Flip cakes and cook until golden brown on underside. Wipe skillet clean and repeat with more cooking spray and remaining batter. Makes 4 pancakes.

 

 

Peach Cobbler Oatmeal

Ingredients:

· 3 1/2 cups water

· pinch of salt

· 2 1/2 cups rolledoats

· 2 1/4 tsp. cinnamon

· pinch of nutmeg

· 2 large peaches, chopped

· 3-4 tablespoons ligh brownsugar

· 1/4 cup chopped pecans for garnish; if desired

Directions:

In a large saucepan over medium heat, add water and salt. Bring to a boil. Add oats, cinnamon and nutmeg and stir to combine.

Cook for 4 minutes, or until oatmeal thickens. Add peaches and brown sugar and cook one additional minute.

3. Serve immediately and garnish with pecans, if desired.

Vegetarian cuisineis based on food that meets vegetarian standards by not including meat and animal tissue products (such as gelatin or animal-derived rennet). For lacto-ovo vegetarianism (the most common type of vegetarianism in the Western world), eggs and dairy products such as milk and cheese are permitted.

For lacto vegetarianism, the earliest known type of vegetarianism (recorded in India), dairy products such as milk and cheese are permitted. The strictest forms of vegetarianism are veganism and fruitarianism, which exclude all animal products, including dairy products as well as honey, and even some refined sugars if filtered and whitened with bone char.

Vegetarian foods can be classified into several different types:

Typical vegetarian food: includes cereals, grains, fruits, vegetables, legumes and nuts.

Soy products including tofu and tempeh which are common protein sources.

Textured vegetable protein (TVP), made from defatted soy flour, often included in chili and burger recipes in place ofground meat.

Meat analogues, which mimic the taste, texture, and appearance of meat and are often used in recipes that traditionally contained meat.

Vegans may also use analogues for eggs and dairy products (such as aquafaba, plant cream or plant milk).

Mango Panna Cotta

Ingredients:

· forCreamLayer

· 1 can (14 oz) coconutmilkunsweetened

· 1/4 cupsugar

· 1teaspoon vanillaextract

· 1-1/2 teaspoonagar-agar

· forMangoLayer

· 1-1/2 cup mango puree, (I used 1-1/2 mango, mango should not be over ripe)

· 2 teaspoonslemonjuice

· 1/4 cup sugar use as needed depend on sweetness of mango

· 1-1/2 teaspoonagar-agar

Method of cooking:

ForCreamLayer

1. In a sauce pan add the coconut milk and sugar, bring it to boil over medium heat. Boilfor 3-4 minutes.

2. Dissolve agar-agar in two tablespoons of luke warm water, add agar-agar and vanilla to coconut milk, boil for about 2 minutes, mixing continuously making sure there are no lumps. Turnoff theheat.

3. Whisk the milk for a few minutes and pour into the dish. Let this sit for about 25 minutes before adding the mango layer. Note: as coconut will cool it will be getting firm like jello, before adding the mango layer coconut layer should be firm but not settled all the way completely.

4. In a sauce pan add the mango puree, sugar and lemon juice and bring it to boil over medium heat. Boilfor 2-3 minutes.

5. Dissolve agar-agar in two tablespoons of luke warm water, add agar-agar to the mango pulp, boil for about 2 minutes mixing continuously, making sure there are no lumps.

6. Turn off the heat, whisk for few minutes.

7. Pour the mango puree over coconut, coconut milk should be little firm.

8. Refrigerate for about three hours before serving. Slice the panna cotta in individual serving pieces. Whiteandyellowmakesthislookbeautiful.

9. Mango panna cotta can be refrigerated for 5-6 days. Enjoy!
